After soaking for half an hour, he picked the fish up, used paper towels again to absorb the moisture, then strung them up with a rope and took them to the second-floor balcony to let the night sea breeze dry them out.

His drying method was called overnight drying, different from the traditional sun-drying method, and the fish jerky produced this way was usually not too hard.

The Mackerel needed to be air-dried for 16 hours, and if you wanted it a bit softer, you would just air-dry it for a shorter time.

Chu Mingcheng didn’t plan on drying them too long; he purposely soaked them in salt water so that later he could add some seasoning and bake them in the oven, which would make them very tasty.

Once the kitchen was cleaned up, Chen Yang arrived by car.
