Removing the Sichuan peppercorns is necessary; otherwise, biting into one would leave an unspeakable taste. Leave the oil in the wok and add in the minced mix of green onion, ginger, garlic, and chili slices to fry until fragrant, then add the shredded potatoes.
After stir-frying for about two to three minutes, pour vinegar around the edge of the wok and continue to stir-fry the shredded potatoes, then add in green and red pepper strips.
Finish with green onion, season with salt, sugar, and MSG to taste, and it’s done.
Turn off the heat – the dish is complete.
Sun Lifang, taking orders, shouted loudly, “We’ve added hot and sour shredded potatoes to the menu!”
When everyone heard that a new dish had been added, and they could smell the fragrance of potatoes in the air.
